OK, so I’m pushing it sightly by calling this a “recipe”, but it still counts! It’s ridiculously quick and easy to make, is really healthy and it feels like a treat (to me, anyway).
Salmon is an oily fish, which we’re advised to eat at least once a week. The salmon and eggs both contain protein and Omega 3 fatty acid, which is essential for a healthy body, as well as vitamins and minerals. Try and use sustainably caught salmon and organic free range eggs if you can.
Enjoy it with thick sliced wholemeal toast to boost your carbohydrates. And throw a few chives on top to make it look ‘cheffy’!
