MmmMediterranean Recipe: Healthy Hake with Salsa Verde

I’m a big fan of fish! Easy to cook and uber-healthy. So here’s another delicious Mediterranean fish recipe – Hake with Salsa Verde. And even better, I already had almost all the ingredients in the kitchen 🙂

Hake with Salsa Verde: Serves 2

Heat the oven to 180°C/Gas4. Season 2 hake steaks and dust with plain flour. Fry the fish in 1 tbsp olive oil for 1 min on each side, place in an ovenproof dish and sprinkle with juice of half a lemon. In a clean pan, fry 1 finely chopped onion and 2 finely chopped garlic cloves in 1 tbsp olive oil until soft. Stir in 1 tbsp plain flour and cook for 1 min, then slowly add 75ml fish stock (or veg stock) and 75ml white wine, stirring until thickened. Add a large handful of finely chopped parsley and half a cup of frozen peas. Pour the sauce over the fish and bake for 15-20 mins.

Serve the fish with asparagus or whatever vegetables you particularly like.

Optional extra – add 10 fresh, cleaned clams to the fish for the last 3-4 mins of cooking, discarding any un-opened ones once cooked.
