Healthy Winter Warmer : Easy Tomato Soup

DSC04261-BThe reason I love this recipe is in the title…EASY! And there’s nothing nicer on a chilly day than a bowl of hot soup.

Fry 1 chopped onion and 1 chopped garlic clove in 1 tsp olive oil until soft. Add 1 small peeled, chopped sweet potato and cook for 5 minutes. Add 1 tin of tomatoes and gently simmer until the potato is cooked. Add 1 tin of haricot beans and simmer until the beans are hot. Then whizz up the soup with a blender & season the soup to taste. Ready!

How easy was that??
