I recently discovered how to make healthy roast potatoes. I wasn’t looking for a healthy recipe for roast potatoes, I just ran out of goose fat! Yes, I do cook my roasties in goose fat… I just don’t eat them very often.
Place 800g of quartered potatoes into a roasting tin and pour over 200ml stock. (If using a stock cube, aim for ones that are low in salt.) Brush the potatoes with 1 tbsp olive oil. Roast at 200C/fan 180C for 50 mins. Then brush the potatoes with another tbsp olive oil and cook for a further 10 mins. Serve the potatoes once the stock is absorbed and the potatoes are cooked through.
And very nice they are too! Just the thing to cut down the extra calories this Christmas. Enjoy 🙂
